Turns out from looking in the settings file that the game was actually using 1920x1080 which explains why I was able to see aliasing so clearly even with anti-aliasing turned on! I found this out while trying to fix the resolution as the game was saying it was using 3440x1440 but displaying a low res 16:9 stretched to the centre of the display. Not only that but the mouse pointer was locked to the second monitor while the game was reacting as if it was mapped to the 3440x1440 of the first monitor! The ultra-wide's display was a 16:9 display being displayed in the native 3440x1440 resolution with vertical black bars at the sides, I have that fixed now thanks to another thread.

When I switched KSP2 to full screen mode it decided to display the game on BOTH monitors with the ultra-wide's display being squished into the 16:9 on the second monitor.

I have a dual monitor setup, I'm sure you guessed from the title, my main monitor is an ultra-wide 2k (3440x1440) and my second one a 16:9 2k (2560x1440).
